BARATXURI
BASQUE FIRE COOKERY
After an excellent stint as a local favourite in Ramsbottom, the Baratxuri team bring their taste of Basque Country to Peter Street. Inspired by the great kitchens of Bilbao and San Sebastián, Baratxuri makes for a truly authentic dining experience. With an ethos of simple yet perfected cookery, almost every dish is kissed by fire using the traditional Rescoldo wood-fired grill.Expect to see large cuts of meat, their famous Txuleton steaks and whole fish alongside smaller raciones such as Boquerones, Tortilla de Bilbao and Bacalao Pil Pil.

As a former Great British Menu chef and semi-finalist in the National Chef of the Year awards, Brazil born Caroline Martins knows a thing or two about producing an outstanding dish. She arrives at Exhibition fresh off the success of her popular residency in Ancoats, the Sao Paolo Project.With a passion for championing Brazilian cuisine in the UK, Sao Paolo Bistro brings a laid back spin on their previous fine-dining concept. Small, local suppliers are at the core of the new menu with Northern Cure, The Crafty Cheeseman and Dormouse Chocolates all featuring.

SCANDI SMALL PLATES
Named by the Michelin Guide within their first year, OSMA has been wowing visitors in their suburban Prestwich spot since 2020. Sofie and Danielle land at Exhibition with a new relaxed edge to their famous Scandinavian concept. Named in a nod to the home cities of the two founders, OSlo and MAnchester, OSMA takes cues from Scandinavian culture and cooking traditions. These guys are all about serving up taste experiences with a relaxed edge, showcasing local, seasonal produce.From open sandwiches and soups for lunch, to tempting small plates made for sharing in the evening - Sofie and Danielle provide dishes that make people happy. Think “hygge” on a plate. Come say “hallo”!
